In the bowels of the Picos de Europa we have several caves, each one contributes a flavor and different smell to the cheeses. The humidity, the temperature, the limestone from which they are formed and the height at which the caves are found influence their characteristics. The temperature in these caves is around 6º and 8º with an 95% humidity, very important factors for the cheese to mature more slowly and its flavor is incomparable. Accessing some of our caves by car is totally impossible, as well we help ourselves with pack animals to transport our cheeses. And those that we can access by car, in the winter months, are cut off by the large amount of snow that accumulates in this area of high mountain, so to make the work of turning the cheese we must make a great effort that is finally rewarded with the satisfaction of our customers.
We will visit the cheese factory, where we will learn how the process of making cheese is, then we will walk a few minutes to the cave, where we will know the maturation conditions that give that characteristic flavor to cheese, and we will finish with a tasting in which you can taste our two types of cheese, accompanied by curds with jam and natural cider.
The approximate duration of our gastronomic route is an hour and a half.
